I think the best way is to wait for a week or two till Apple will fix the problem in one of the upcoming updates.

Synchronization of calendars between Outlook and your Apple i Phone or i Pod touch requires Apple i Tunes.
You can configure which items are synchronized during a one-time set up process.
Another good little trick is to try a "Replace data on this i Phone" near the bottom of the info tab, that will wipe the specific data set off the i Phone and replace it with the computers, often a good way to get them talking to each other again.

Email for the same account is updating routinely with no issues. Can't seem to find specific information on this from Apple.
